Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, fresh or canned
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes or until water is absorbed.
  3. Fluff the quinoa with a fork and allow it to cool.
  4. In a large bowl, combine black beans, corn, red bell pepper, avocado, and cilantro.
  5. In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper.
  6. Add the cooled quinoa to the bowl with the vegetables and pour the dressing over. Toss to combine and serve.
