Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup butterscotch sauce
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham cracker crumbs and melted butter in a bowl. Press the mixture into the bottom of a springform pan to form the crust.
  3. In a large bowl, beat the cream cheese and brown sugar together until smooth.
  4. Add the vanilla extract and eggs, one at a time, mixing well after each addition.
  5. Stir in the butterscotch sauce until fully incorporated.
  6. Pour the cheesecake filling into the prepared crust.
  7. Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
  8. Remove from oven and let cool. Refrigerate for at least 4 hours before serving.
  9. Top with sour cream before serving, if desired.
