- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup butterscotch sauce
- 1 cup sour cream
Instructions
- Preheat the oven to 350°F (175°C).
- Combine graham cracker crumbs and melted butter in a bowl. Press the mixture into the bottom of a springform pan to form the crust.
- In a large bowl, beat the cream cheese and brown sugar together until smooth.
- Add the vanilla extract and eggs, one at a time, mixing well after each addition.
- Stir in the butterscotch sauce until fully incorporated.
- Pour the cheesecake filling into the prepared crust.
- Bake for 50-60 minutes, or until the center is set but still slightly jiggly.
- Remove from oven and let cool. Refrigerate for at least 4 hours before serving.
- Top with sour cream before serving, if desired.

- For best results, use room temperature ingredients.
- Can be topped with additional butterscotch sauce for extra flavor.
