Ingredients

- 1 cup grated zucchini
- 1 cup blueberries
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the grated zucchini, blueberries, sugars, oil, eggs, and vanilla.
- In a separate bowl, mix the flour, baking powder, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the wet ingredients until just combined.
- Pour the batter into a greased baking pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before cutting into bars.

- For a gluten-free option, substitute all-purpose flour with a gluten-free blend.
