Baked Chicken Ricotta Meatballs served with a creamy Spinach Alfredo Sauce.
Ingredients

- 1 pound ground chicken
- 1 cup ricotta cheese
- 1 cup spinach, chopped
- 1/2 cup Parmesan cheese, grated
- 1/2 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix together ground chicken, ricotta, spinach, Parmesan, breadcrumbs, egg, garlic, salt, and black pepper until well combined.
- Form the mixture into meatballs, about 1.5 inches in diameter, and place them on a baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until cooked through.
- While the meatballs are baking, prepare the Spinach Alfredo Sauce by combining cream, butter, and additional spinach in a saucepan over medium heat.
- Serve the meatballs hot with the sauce drizzled on top.
Notes
- For a spicier kick, add red pepper flakes to the meatball mixture.
- These meatballs can be served over pasta or zucchini noodles.
