Ingredients

  • 1 cup quinoa
  • 2 medium sweet potatoes
  • 2 apples
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts
  • 1/4 cup feta cheese (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook quinoa according to package instructions.
  2. While the quinoa is cooking, peel and cube the sweet potatoes. Roast them in the oven until tender.
  3. Chop the apples and mix them with the cooked quinoa, roasted sweet potatoes, cranberries, and walnuts.
  4. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  5. Drizzle the dressing over the salad and toss to combine.
  6. If using, sprinkle feta cheese on top before serving.
