Ingredients

- 1 cup quinoa
- 2 medium sweet potatoes
- 2 apples
- 1/4 cup dried cranberries
- 1/4 cup walnuts
- 1/4 cup feta cheese (optional)
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook quinoa according to package instructions.
- While the quinoa is cooking, peel and cube the sweet potatoes. Roast them in the oven until tender.
- Chop the apples and mix them with the cooked quinoa, roasted sweet potatoes, cranberries, and walnuts.
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
- Drizzle the dressing over the salad and toss to combine.
- If using, sprinkle feta cheese on top before serving.

- Add more nuts for extra crunch.
