- 1/2 cup vanilla pudding mix

- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the pumpkin puree, sugars, and vegetable oil.
- Add the eggs and vanilla extract, mixing until smooth.
- In another bowl, combine flour, pudding mix, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
- Allow cooling before slicing.
