- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup brown sugar
- 4 (8 ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 tablespoon vanilla bean paste
- 4 large eggs
- 1 cup sour cream
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs and melted butter; mix well.
- Press the mixture into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat together the cream cheese, brown sugar, and granulated sugar until smooth.
- Add vanilla bean paste and eggs, one at a time, mixing well after each addition.
- Stir in sour cream and heavy cream until fully incorporated.
- Pour the cheesecake filling into the prepared crust.
- Bake for about 60 minutes or until the edges are set and the center is slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional hour.
- Remove from the oven and cool completely before refrigerating for at least 4 hours or overnight.
