Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 tablespoon vanilla bean paste
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter; mix well.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large mixing bowl, beat together the cream cheese, brown sugar, and granulated sugar until smooth.
  5. Add vanilla bean paste and eggs, one at a time, mixing well after each addition.
  6. Stir in sour cream and heavy cream until fully incorporated.
  7. Pour the cheesecake filling into the prepared crust.
  8. Bake for about 60 minutes or until the edges are set and the center is slightly jiggly.
  9. Turn off the oven and leave the cheesecake inside for an additional hour.
  10. Remove from the oven and cool completely before refrigerating for at least 4 hours or overnight.
