- 4 large russet potatoes
- 1/2 cup unsalted butter

- 4 cups chicken broth
- 2 cups heavy cream

- 1/2 cup chopped green onions
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked turkey bacon, crumbled
Instructions
- Peel and dice the russet potatoes.
- In a large pot, melt the butter over medium heat. Add the flour and whisk for about 1 minute.
- Gradually add the chicken broth, whisking continuously to prevent lumps.
- Add the diced potatoes and bring to a boil. Reduce heat and let simmer until potatoes are tender.
- Stir in the heavy cream and continue cooking.
- Add the cheese, green onions, garlic powder, onion powder, salt, and black pepper. Stir until the cheese is melted and everything is combined.
- Serve hot, topped with crumbled turkey bacon.
