Ingredients

  • 8 ounces rice noodles
  • 4 slices turkey bacon
  • 1 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 2 green onions, chopped
  • 1/4 cup chopped cilantro

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a pan, cook the turkey bacon until crispy. Remove and chop.
  3. In a bowl, mix together peanut butter, soy sauce, honey, sesame oil, rice vinegar, garlic, and red pepper flakes.
  4. Toss the cooked noodles with the peanut sauce and top with turkey bacon, green onions, and cilantro.
  5. Serve warm.

  • For a vegetarian option, omit turkey bacon and add tofu.
