Ingredients

- 8 ounces rice noodles
- 4 slices turkey bacon
- 1 cup peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 2 green onions, chopped
- 1/4 cup chopped cilantro
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a pan, cook the turkey bacon until crispy. Remove and chop.
- In a bowl, mix together peanut butter, soy sauce, honey, sesame oil, rice vinegar, garlic, and red pepper flakes.
- Toss the cooked noodles with the peanut sauce and top with turkey bacon, green onions, and cilantro.
- Serve warm.
Notes
- For a vegetarian option, omit turkey bacon and add tofu.
- Adjust the spice level by varying the amount of red pepper flakes.
