Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, cream together the granulated sugar, brown sugar, and butter until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, combine the flour, baking soda, and salt.
- Gradually add the dry ingredients to the creamed mixture, alternating with the buttermilk, beginning and ending with the flour mixture.
- Stir in the vanilla extract, crushed pineapple, pecans, and coconut until well combined.
- Pour the batter into the prepared baking pan and smooth the top.
- Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan before serving.
