- 1 cup rice
- 1 pound ground beef
- 4 slices turkey bacon
- 1 cup black beans
- 1 cup corn
- 1 cup diced tomatoes
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt to taste
- 1 cup shredded cheese
- 1/2 cup chopped cilantro
Instructions
- Cook rice according to package instructions.
- In a large skillet, cook turkey bacon until crispy, then remove and chop.
- In the same skillet, brown the ground beef.
- Add black beans, corn, diced tomatoes, and spices to the beef.
- Mix in the turkey bacon and let simmer for a few minutes.
- Serve the beef mixture over rice and top with cheese and cilantro.
Notes
- For a spicier bowl, add jalapeños.
- Can be made vegetarian by omitting the meat and adding more beans.
