Ingredients

  • 1 cup rice
  • 1 pound ground beef
  • 4 slices turkey bacon
  • 1 cup black beans
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • 1 cup shredded cheese
  • 1/2 cup chopped cilantro

Instructions

  1. Cook rice according to package instructions.
  2. In a large skillet, cook turkey bacon until crispy, then remove and chop.
  3. In the same skillet, brown the ground beef.
  4. Add black beans, corn, diced tomatoes, and spices to the beef.
  5. Mix in the turkey bacon and let simmer for a few minutes.
  6. Serve the beef mixture over rice and top with cheese and cilantro.

Notes

  • For a spicier bowl, add jalapeños.
