Ingredients

  • 8 ounces Thai rice noodles
  • 4 slices turkey bacon
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon chili paste
  • 1 lime, juiced
  • 3 green onions, chopped

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large skillet, cook turkey bacon until crispy. Remove and chop into pieces.
  3. In the same skillet, heat vegetable oil over medium heat.
  4. Add garlic, onion, and bell peppers. Sauté until soft.
  5. Add broccoli and stir-fry for 2-3 minutes.
  6. Add cooked noodles, turkey bacon, soy sauce, oyster sauce, and chili paste. Toss until combined.
  7. Finish with lime juice and garnish with green onions before serving.

Notes

  • For extra heat, add more chili paste according to your preference.
  • Feel free to substitute turkey bacon with regular bacon if desired.
