- 2 cups cooked chicken, shredded
- 1 cup corn, grilled or canned
- 1/2 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1/2 cup feta cheese, crumbled
- 2 avocados, sliced
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1 teaspoon paprika
- Salt to taste
Instructions
- In a large bowl, combine shredded chicken, corn, red onion, cilantro, and feta cheese.
- In a small bowl, mix lime juice, chili powder, paprika, and salt.
- Pour the dressing over the chicken mixture and toss to combine.
- Serve in bowls and top with sliced avocados.
Notes
- For a spicier version, add diced jalapeños.
