A deliciously easy take on the classic pop tart, this slab pie offers a wonderful burst of strawberry flavor in every bite.

- 1 package refrigerated pie crusts
- 2 cups fresh strawberries, diced
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 egg (for egg wash)
- 1 cup powdered sugar (for icing)
- 2 tablespoons milk (for icing)
Instructions
- Preheat the oven to 375°F (190°C).
- Roll out the pie crust and fit it into a baking sheet.
- In a bowl, mix strawberries, sugar, cornstarch, vanilla, and lemon juice.
- Pour the strawberry mixture onto the prepared crust.
- Cover with another layer of pie crust and seal the edges.
- Brush with egg wash.
- Bake for 25-30 minutes until golden brown.
- Let cool and then drizzle with icing made from powdered sugar and milk.
Notes
- Adjust sugar according to the sweetness of the strawberries.
- For an added crunch, sprinkle some sugar on top before baking.
