Description

A hearty and comforting slow cooker casserole loaded with turkey and bacon.


Ingredients

  • 1 pound ground turkey
  • 6 slices turkey bacon
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups shredded cheese (e.g., cheddar, Monterey jack)
  • 1 cup diced bell peppers
  • 1 cup diced onion

Instructions

  1. In a large skillet, cook the turkey and turkey bacon until browned.
  2. Add the cooked turkey mixture to the slow cooker.
  3. Add the black beans, corn, diced tomatoes, spices, and vegetables to the slow cooker.
  4. Stir to combine all ingredients.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. In the last 10 minutes of cooking, add the cheese on top and cover until melted.

Notes

  • For extra spice, add jalapeños or cayenne pepper to taste.
  • Can be served with tortilla chips or over rice.
