A hearty and comforting slow cooker casserole loaded with turkey and bacon.
Ingredients

- 1 pound ground turkey
- 6 slices turkey bacon
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 cups shredded cheese (e.g., cheddar, Monterey jack)
- 1 cup diced bell peppers
- 1 cup diced onion
Instructions
- In a large skillet, cook the turkey and turkey bacon until browned.
- Add the cooked turkey mixture to the slow cooker.
- Add the black beans, corn, diced tomatoes, spices, and vegetables to the slow cooker.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- In the last 10 minutes of cooking, add the cheese on top and cover until melted.
Notes
- For extra spice, add jalapeños or cayenne pepper to taste.
- Can be served with tortilla chips or over rice.
