Ingredients

  • 1 cup heavy cream
  • 2 cups granulated sugar
  • 1/2 cup unsalted butter
  • 1 teaspoon sea salt
  • 2 cups dark chocolate chips
  • 1/4 cup cocoa powder

Instructions

  1. In a saucepan, heat heavy cream over medium heat until it begins to simmer.
  2. In another pan, melt sugar over medium heat until it turns golden brown.
  3. Remove from heat and add butter and sea salt to the caramel.
  4. Combine the caramel with the warm cream and stir until smooth.
  5. Let the mixture cool and refrigerate until firm.
  6. Once firm, scoop out small portions and roll them into balls.
  7. Coat the truffles in melted dark chocolate and then roll in cocoa powder.
  8. Allow to set before serving.
