A delicious and simple one-pan meal featuring chicken, rice, and vibrant salsa verde.


Ingredients

  • 1 pound chicken breasts
  • 1 cup rice
  • 2 cups salsa verde
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup corn (optional)
  • 1 cup chopped cilantro (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chicken breasts and season with salt, pepper, cumin, and garlic powder. Cook until browned on both sides.
  3. Remove chicken from skillet and set aside.
  4. Add rice, salsa verde, and chicken broth to the skillet. Stir well.
  5. Return chicken to the skillet, cover, and simmer until rice is cooked and chicken is fully cooked.
  6. Mix in corn if using, and garnish with cilantro before serving.

Notes

  • This dish can be made ahead of time and reheated.
  • For a spicier version, add diced jalapeños.
