A delicious and simple one-pan meal featuring chicken, rice, and vibrant salsa verde.
Ingredients

- 1 pound chicken breasts
- 1 cup rice
- 2 cups salsa verde
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup corn (optional)
- 1 cup chopped cilantro (for garnish)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add chicken breasts and season with salt, pepper, cumin, and garlic powder. Cook until browned on both sides.
- Remove chicken from skillet and set aside.
- Add rice, salsa verde, and chicken broth to the skillet. Stir well.
- Return chicken to the skillet, cover, and simmer until rice is cooked and chicken is fully cooked.
- Mix in corn if using, and garnish with cilantro before serving.
Notes
- This dish can be made ahead of time and reheated.
- For a spicier version, add diced jalapeños.
