- 2 cups cherry tomatoes
- 4 cloves garlic

- 1 cup ricotta cheese
- 8 ounces pasta of choice

Instructions
- Preheat the oven to 400°F (200°C).
- Spread cherry tomatoes and garlic on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- Roast in the oven for 20-25 minutes until tomatoes are burst and garlic is golden.
- Meanwhile, cook pasta according to package instructions. Drain and set aside.
- In a large bowl, combine the roasted tomatoes, garlic, and ricotta cheese. Mix well.
- Add the cooked pasta to the bowl and stir until evenly combined.
- Top with grated Parmesan cheese and fresh basil before serving.
Notes
- For added flavor, consider adding a pinch of red pepper flakes when roasting the tomatoes.
