Ingredients

  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup rolled oats
  • 1/4 cup vanilla protein powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. In a large bowl, combine pumpkin puree, almond butter, and honey or maple syrup.
  2. Add the rolled oats, protein powder, and spices. Stir until fully combined.
  3. If desired, fold in mini chocolate chips.
  4. Using your hands, form the mixture into small balls and place them on a baking sheet.
  5. Refrigerate for at least 30 minutes to firm up.
