Ingredients

- 1 cup pumpkin puree
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 cup rolled oats
- 1/4 cup vanilla protein powder
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/4 cup mini chocolate chips (optional)
Instructions
- In a large bowl, combine pumpkin puree, almond butter, and honey or maple syrup.
- Add the rolled oats, protein powder, and spices. Stir until fully combined.
- If desired, fold in mini chocolate chips.
- Using your hands, form the mixture into small balls and place them on a baking sheet.
- Refrigerate for at least 30 minutes to firm up.
Notes
- Store in an airtight container in the fridge for up to a week.
- These balls can also be frozen for longer storage.
