Ingredients

  • 12 large jumbo pasta shells
  • 1 cup pumpkin puree
  • 1 cup gouda cheese, shredded
  • 1/2 cup ricotta cheese
  • 1/4 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 5 leaves fresh sage, chopped
  • 1/2 cup parmesan cheese, grated

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo shells according to package instructions and set aside.
  3. In a mixing bowl, combine pumpkin puree, gouda, ricotta, nutmeg, salt, and pepper.
  4. Stuff each shell with the pumpkin mixture.
  5. In a saucepan, melt the butter over medium heat, add sage and cook until browned.
  6. Stir in heavy cream and parmesan cheese to create the alfredo sauce.
  7. Place the stuffed shells in a baking dish, pour the sauce over the top.
  8. Bake for 20 minutes until heated through and bubbly.

Notes

  • For extra flavor, sprinkle additional parmesan on top before baking.
