  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup pure pumpkin puree
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the granulated sugar, brown sugar, oil, and eggs until well combined.
  4. Add the pumpkin puree and vanilla extract to the wet ingredients and mix until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, and mix until just combined.
  6. Fill each cupcake liner about 2/3 full with the batter.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Let cool before serving.
