- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup canned pumpkin puree
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar
- 1/4 cup rolled oats
- 1/4 cup melted butter (for streusel)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, mix together the pumpkin, sugar, oil, eggs, and vanilla until smooth.
- Combine the wet and dry ingredients, mixing just until incorporated.
- In a separate bowl, make the streusel by combining brown sugar, oats, and melted butter. Mix until crumbly.
- Fill each muffin cup halfway with batter, sprinkle with streusel, then add more batter to fill the cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- For an added spice kick, try adding chopped walnuts or pecans to the batter.
- Store leftovers in an airtight container at room temperature for up to three days.
