- 1 cup all-purpose flour
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, sugar, and salt.
- Add melted butter and mix until crumbly.
- Press the mixture into the bottom of a greased baking dish.
- Bake for about 15 minutes until golden.
- In another bowl, whisk together eggs, lemon juice, lemon zest, and baking powder.
- Pour the lemon mixture over the baked crust and return to the oven.
- Bake for an additional 20 minutes.
- Allow to cool, dust with powdered sugar, and cut into squares before serving.
Notes
- For a tangier flavor, add more lemon juice.
- Serve chilled for best results.
