- 1 cup graham cracker crumbs
- 4 tablespoons melted butter
- 16 ounces cream cheese
- 1 cup pumpkin puree
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 teaspoons pumpkin pie spice
Instructions
- Preheat oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of muffin tins.
- In a separate bowl, beat cream cheese until smooth. Add pumpkin puree, sugar, eggs, vanilla, and pumpkin pie spice. Mix until well combined.
- Pour the pumpkin mixture over the crusts in muffin tins.
- Bake for 20-25 minutes or until set. Let cool before removing from tins.
