Description

Mini chocolate cakes filled with marshmallow and coated in rich chocolate are the perfect treat for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup marshmallow fluff
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, beat the butter and sugar together until light and fluffy.
  3. Add in the eggs and vanilla extract, mixing well.
  4. In another bowl, combine the flour, cocoa powder, and baking powder.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk.
  6. Fill the cupcake liners halfway with the batter.
  7. Add a spoonful of marshmallow fluff on top of the batter in each liner, then cover with more batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let the cakes cool fully before dipping in chocolate.
  10. For the chocolate coating, melt chocolate chips in a double boiler and dip the top of each cooled cake.
