A delicious and easy recipe for Mexican Street Corn Pasta Salad with a twist of turkey bacon.

- 8 ounces pasta
- 1 can corn, drained
- 4 strips turkey bacon, cooked and crumbled
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/2 cup cilantro, chopped
- 1/2 cup mayonnaise
- 1/4 cup lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large bowl, combine the corn, turkey bacon, red bell pepper, avocado, and cilantro.
- Add the cooked pasta to the bowl and mix well.
- In a separate small bowl, whisk together the mayonnaise, lime juice, chili powder, salt, and pepper.
- Pour the dressing over the pasta salad and mix until well combined.
- Refrigerate for at least 30 minutes before serving.
