A delightful and fresh Mediterranean quinoa salad that’s easy to make and packed with flavor.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup kalamata olives, pitted and sliced
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt to taste
- Fresh parsley, chopped, for garnish
Instructions
- Rinse quinoa under cold water and drain.
- In a saucepan, combine quinoa and water and bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes until water is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
- In a large bowl, combine quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- In a small bowl, whisk together olive oil, lemon juice, oregano, and salt, then pour over the salad.
- Toss everything together gently until well mixed.
- Garnish with fresh parsley before serving.
Notes
- Serve chilled or at room temperature for the best flavors.
- This salad can be made ahead of time and stored in the refrigerator.
