- 1 can chickpeas, drained and rinsed
- 1 cup breadcrumbs
- 1/4 cup fresh parsley, chopped
- 1 lemon, zested and juiced
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup onion, finely chopped
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mash the chickpeas with a fork.
- Stir in breadcrumbs, parsley, lemon zest, lemon juice, cumin, salt, pepper, and onion until well combined.
- Form mixture into patties and place them on a baking sheet.
- Drizzle olive oil over the patties.
- Bake for 20-25 minutes, flipping halfway through, until golden brown.
