- 1 cup orzo pasta
- 2 carrots, diced
- 1 celery stalk, diced

- 1 teaspoon dried oregano
- 1 teaspoon salt

Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until softened.
- Add garlic and oregano; cook for another minute.
- Pour in the chicken broth and bring to a boil.
- Add the chicken breasts and orzo; cook until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Stir in lemon juice and zest, season with salt and pepper.
- Garnish with fresh parsley before serving.
