- 2 cups diced sweet potatoes
- 1 pound chicken breasts
- ¼ cup maple syrup
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix maple syrup, Dijon mustard, olive oil, garlic powder, salt, and pepper.
- Toss the sweet potatoes in half of the marinade and place on a baking sheet.
- Coat the chicken in the remaining marinade and place alongside sweet potatoes.
