Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1/2 cup feta cheese, crumbled
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a pot, bring vegetable broth to a boil and add orzo. Cook until al dente, about 8-10 minutes.
  3. While the orzo cooks, toss shrimp with olive oil, lemon juice, garlic, oregano, salt, and pepper. Spread shrimp on a baking sheet.
  4. Roast shrimp in the preheated oven for about 8-10 minutes until pink and cooked through.
  5. Once the orzo is done, drain and mix it with roasted shrimp and feta cheese. Add lemon zest for extra flavor.
