- 1 cup orzo pasta
- 2 cups vegetable broth
- 1/2 cup feta cheese, crumbled
- 1 pound shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a pot, bring vegetable broth to a boil and add orzo. Cook until al dente, about 8-10 minutes.
- While the orzo cooks, toss shrimp with olive oil, lemon juice, garlic, oregano, salt, and pepper. Spread shrimp on a baking sheet.
- Roast shrimp in the preheated oven for about 8-10 minutes until pink and cooked through.
- Once the orzo is done, drain and mix it with roasted shrimp and feta cheese. Add lemon zest for extra flavor.
- Serve warm and enjoy!
