Ingredients

- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, powdered sugar, and melted butter to form the crust mixture.
- Press the mixture into the bottom of a greased baking pan.
- Bake for 15-20 minutes until lightly golden.
- In another bowl, whisk together eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt.
- Pour the lemon mixture over the crust and bake for an additional 20-25 minutes.
- Allow to cool, then cut into bars.
Notes
- For a sweeter treat, dust the bars with more powdered sugar before serving.
