- 1 cup diced potatoes
- 4 slices turkey bacon

Instructions
- Preheat the oven to 350°F.
- In a skillet, cook the turkey bacon until crispy, then set aside.
- In the same skillet, cook the diced potatoes and onions until soft.
- Beat the eggs in a bowl, and then add the cooked bacon and potato mixture.
- Pour the egg mixture back into the skillet, and top with cheese.
- Bake in the oven for 20-25 minutes, until the eggs are set.
