- 2 large sweet potatoes
- 3 tablespoons honey
- 1 tablespoon chili powder
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped cilantro
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the sweet potatoes, then cut them into large chunks.
- Boil the sweet potato chunks in salted water until tender, about 15-20 minutes.
- Drain the potatoes and place them on a baking sheet.
- Using a fork or a masher, gently smash the sweet potatoes.
- Drizzle the olive oil, honey, and chili powder over the smashed sweet potatoes.
- Season with salt and pepper, then toss to combine.
- Bake in the preheated oven for 20-25 minutes, or until golden and crispy.
- Garnish with chopped cilantro before serving.
