Ingredients

  • 1 cup white rice
  • 2 sausages, sliced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 4 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic; sauté until translucent.
  3. Stir in the sliced sausage, cumin, and paprika; cook until sausage is browned.
  4. Add the black beans, rice, vegetable broth, salt, and pepper.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked.
  6. Remove from heat and let it sit covered for 5 minutes before serving.

Notes

  • For added flavor, use smoked sausage.
