Ingredients

- 1 cup black beans
- 1 cup white rice
- 2 sausages, sliced
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 4 cups vegetable broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic; sauté until translucent.
- Stir in the sliced sausage, cumin, and paprika; cook until sausage is browned.
- Add the black beans, rice, vegetable broth, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked.
- Remove from heat and let it sit covered for 5 minutes before serving.
Notes
- For added flavor, use smoked sausage.
- Great served with avocado or cilantro on top.
