Description

Ingredients

  • 5 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup turkey bacon, cooked and crumbled
  • 2 cups heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a crockpot, combine the potatoes, onion, chicken broth, turkey bacon, garlic powder, salt, and black pepper.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender.
  3. About 30 minutes before serving, stir in the heavy cream.
  4. Once heated through, garnish with fresh parsley before serving.

Notes

  • For a lighter version, you can substitute half-and-half for the heavy cream.
