- 5 large potatoes, peeled and diced
- 1 onion, chopped
- 4 cups chicken broth
- 1 cup turkey bacon, cooked and crumbled
- 2 cups heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- In a crockpot, combine the potatoes, onion, chicken broth, turkey bacon, garlic powder, salt, and black pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender.
- About 30 minutes before serving, stir in the heavy cream.
- Once heated through, garnish with fresh parsley before serving.
Notes
- For a lighter version, you can substitute half-and-half for the heavy cream.
- Stir in some shredded cheese for additional flavor.
