Description

A deliciously healthy twist on a classic au gratin with spaghetti squash, turkey bacon, and chicken ham.


Ingredients

  • 1 large spaghetti squash
  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 cup shredded low-fat cheese
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup milk
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Brush the inside of the squash with olive oil, then place cut-side down on a baking sheet. Roast in the oven for about 30-40 minutes, or until tender.
  4. While the squash is roasting, cook the turkey bacon in a pan until crispy, then chop into small pieces.
  5. In a skillet, sauté the onions and garlic until soft, then add the diced chicken ham and turkey bacon.
  6. In a bowl, whisk together the milk, salt, pepper, and Italian seasoning.
  7. Scrape the flesh of the roasted spaghetti squash into a bowl and combine with the ham mixture and cheese.
  8. Pour the milk mixture over the squash and stir to combine.
  9. Transfer the mixture back into the squash shells, top with additional cheese if desired, and return to the oven for another 10-15 minutes until heated through and golden.

Notes

  • Feel free to substitute turkey bacon with regular bacon for more flavor.
  • Add more vegetables like spinach or bell peppers for extra nutrients.
