Ingredients

  • 2 chicken breasts
  • 2 sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 1 avocado, sliced
  • 1/4 cup cilantro, chopped

Instructions

  1. Preheat the grill to medium-high heat.
  2. Peel and dice the sweet potatoes and toss with olive oil, garlic powder, paprika, salt, and pepper.
  3. Grill the chicken breasts for about 6-7 minutes on each side or until fully cooked.
  4. At the same time, grill the sweet potatoes in a grill basket until tender and slightly charred.
  5. Once cooked, slice the chicken and serve over a bed of sweet potatoes.
  6. Top with sliced avocado and chopped cilantro.
