- 2 chicken breasts
- 2 sweet potatoes
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt to taste
- Black pepper to taste
- 1 avocado, sliced
- 1/4 cup cilantro, chopped
Instructions
- Preheat the grill to medium-high heat.
- Peel and dice the sweet potatoes and toss with olive oil, garlic powder, paprika, salt, and pepper.
- Grill the chicken breasts for about 6-7 minutes on each side or until fully cooked.
- At the same time, grill the sweet potatoes in a grill basket until tender and slightly charred.
- Once cooked, slice the chicken and serve over a bed of sweet potatoes.
- Top with sliced avocado and chopped cilantro.
