Ingredients

- 1 pound chicken breast
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup red onion, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Marinate the chicken breasts in the mixture for at least 30 minutes.
- Grill or cook the chicken breasts on a skillet until fully cooked, about 6-7 minutes per side.
- Let the chicken rest before slicing it thinly.
- Assemble the bowls by layering quinoa, sliced chicken, tomatoes, cucumber, red onion, feta, and olives.
