Description

Ingredients

  • 2 cups elbow macaroni
  • 4 slices turkey bacon
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 cup cherry tomatoes, halved
  • 1/2 cup green onions, chopped
  • 1/2 cup celery, diced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni according to package instructions until al dente. Drain and rinse under cold water.
  2. In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
  3. In a large bowl, combine mayonnaise, Dijon mustard, salt, and pepper.
  4. Add the cooled macaroni, turkey bacon, cherry tomatoes, green onions, celery, and parsley to the bowl. Mix well.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
