A refreshing and tasty macaroni salad with a unique twist featuring turkey bacon, perfect for summer gatherings or picnics.
Ingredients

- 2 cups elbow macaroni
- 4 slices turkey bacon
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 cup cherry tomatoes, halved
- 1/2 cup green onions, chopped
- 1/2 cup celery, diced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the macaroni according to package instructions until al dente. Drain and rinse under cold water.
- In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
- In a large bowl, combine mayonnaise, Dijon mustard, salt, and pepper.
- Add the cooled macaroni, turkey bacon, cherry tomatoes, green onions, celery, and parsley to the bowl. Mix well.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
- For a vegan option, substitute bacon with smoked tempeh.
- This salad can be made a day in advance for convenience.
