- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 cup pearl barley
- 6 cups beef broth
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium-high heat.
- Add the beef and brown on all sides.
- Add the onion, carrots, celery, and garlic; cook until softened.
- Stir in the pearl barley, beef broth, thyme, and bay leaves.
- Bring the soup to a simmer, then reduce heat to low and cover.
- Let it cook for about 1.5 to 2 hours, until the barley is tender and the beef is cooked through.
- Season with salt and pepper to taste before serving.
