- 2 large eggs
- 1 cup molasses
- 1/2 cup buttermilk

Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt.
- In another bowl, beat the sugar and butter until light and fluffy.
- Add the eggs, molasses, buttermilk, and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop the batter into the prepared muffin tin and fill each cup about two-thirds full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Allow to cool before serving.
